ALIMENTATION ; COMMERCE ELECTRONIQUE ; DISTRIBUTIONRésumé : The distribution of local food such as fruits and vegetables from direct agricultural producers is a growing trend in how people consume fresh produce, and it is accelerated even more after the hit of the COVID crisis beginning of last year. French consumers have seen a big interest in this new kind of consumption, for many reasons such as for the health benefits, the better remuneration of the agricultural producers, and for the trustful and transparent link with the producers. But as for producers and consumers, this food channel involves problems and challenges.
This mode of consumption is being helped thanks to digital marketplaces. Thanks to digital tools, consumers and local farmers are put in contact and they can proceed to direct sales of local products. I would like to ask: “How do digital marketplaces facilitate the access of local food products and the development of Short-Food-Supply-Chains?”. I will be focusing on this interface as an alternative to sell and distribute local food, and I will explore the benefits and challenges of it.
In order to explore this research question, I did a case study on the French digital marketplace La Ruche Qui dit Oui. My analysis showed that consumers enjoy using this channel because of the aggregation facilities, the visibility and info given about producers and the available offers. Everything is easier and quicker. Producers increase their sales because they have more visibility, new clients and benefit from digital tools.
But it still raises the question of the accessibility and the democratization of local food products, because of the high prices of this type of consumption, reserved to the elite.Programme : MSc Entrepreneurship & Innovation Permalink : https://cataloguelibrary.neoma-bs.fr/index.php?lvl=notice_display&id=538624 How to adapt the experiential offer of hypermarkets in order to counteract the decline in their frequentation? / Louis MAGNIANT / 2021

COMPORTEMENT DU CONSOMMATEUR ; GRANDE DISTRIBUTION SECTEUR ; HYPERMARCHERésumé : For several years now, the number of customers in French hypermarkets has been declining. Indeed, it seems that this model, spearhead of mass consumption, is not as attractive as it was at its creation. This phenomenon can be explained in part by changes in consumer expectations in terms of the experience at the point of sale. To understand how hypermarkets should be transformed, a qualitative study was conducted with French consumers to understand their expectations in terms of customer experience in this type of distribution channel. It seems that consumers are asking for something different than what is currently offered to them. Indeed, if they remain attached to the promise of a wide choice, they expect something else in terms of store design and customer service. FOURNISSEUR ; AIDE A LA DECISION ; CANAL DE DISTRIBUTION ; RESTAURATION SECTEUR ; RESEAU DE TELECOMMUNICATIONRésumé : Given the rising concerns about the environment, health and animal rights, companies that opt for a short-circuit supply chain are surging and are gaining in popularity.. The food industry and restauration are two price sensitive markets that should aim to reduce costs as much as possible. If massive economies of scales appeared as a solution, this shift raises the question of efficiency in short-circuit companies. Given that logistics have always been a key for any company’s success, by creating value, mainly for the customer, as well as suppliers and shareholders, we should look for improvements in logistics to help us achieve a greater efficiency to gain in competitiveness. The value created by supply chain activities is mainly expressed in terms of time and space. An efficient logistics administration visualizes each activity throughout the supply chain as a continuous contribution to the process of added value (Ballou, 2004). Many problems of economic decision concern the selection and/or placement of determined facilities to serve the given demand in an efficient manner (Vygen, 2005), as well as the coordination and control of adequate routes for the optimal provision from the suppliers to the point of consumption. Seeing as transportation and distribution processes tend to represent from 10% to 20% of the final cost of goods, having an efficient logistics system can produce substantial savings for the company (Erin Chancey et ali, 2017).
The objective of this paper is the practical application of a supplier selection that shall minimize transportation cost and time while also respecting quantity and price of goods constraints by redesigning routes between the restaurant and the necessary suppliers by the means of mathematical models.
