JEUNE ; GESTION DU MARKETING ; AGRICULTURE BIOLOGIQUE ; COMPORTEMENT DU CONSOMMATEUR ; AGROALIMENTAIRE SECTEURRésumé : Ce seminar paper apporte un éclairage sur le comportement alimentaire de la génération Y (1980-2000). Plusieurs études ont montré des changements dans la structuration des repas, mais aucune étude spécifique n’a été effectué sur les nouvelles tendances en termes d’aliments consommés. La génération Y souhaite aujourd’hui s’engager dans une consommation alimentaire durable. L’objet de cette étude est de se pencher sur la manière dont les individus hiérarchisent les offres suivantes : les produits issus de l’agriculture biologiques et de l’agriculture biologique Française. Nous avons mené une étude quantitative auprès de 74 individus (hommes et femmes), âgés de 18 à 38 ans, via la soumission d’un questionnaire en ligne. Les résultats affirment que la génération Y est sensible aux enjeux environnementaux et au « Made in France », et montre également que cela se traduit dans le choix du magasin fréquenté mais également dans les achats alimentaires. Elle prouve que lorsqu’un individu est exposé à deux offres, l’une biologique et l’autre biologique Française, son évaluation est positive. Toutefois, il privilégiera l’offre issue de l’agriculture biologique Française. En effet, les individus interrogés ont montré un réel intérêt et une intention d’achat plus forte sur l’offre biologique française, montrant ainsi que la caution « Made in France » apporte de la valeur à la caution « issue de l’agriculture biologique ». EMBALLAGE SECTEUR ; AGROALIMENTAIRE SECTEUR ; COMPORTEMENT DU CONSOMMATEURRésumé : The purpose of this paper was to find out the extent to which food packaging have a full part to play in influencing consumers’ purchase and usage behavior. Using a veritable digest of many academic papers, this study evaluated the impact that packaging extrinsic cues have on consumers’ quality perception and overall attitude towards a product. Qualitative data included a reading of 23 articles based on research studies. The findings were analyzed under the light of in-depth understanding of the data. Results showed that the communication exchange between the package components and the consumers lead to the acceptability of products. A large proportion of consumers focus on branding and labelling elements as well as the country-of-origin to build their own quality perception and appreciation of the food offering. The achieved results following various readings acknowledged that these major packaging characteristics give a cognitive and emotional sense to consumers making comparisons of different products and lead the purchase intention. Therefore, the role of packaging extrinsic cues in influencing consumer purchase intention is well supported, being considered as a relevant factor in explaining purchase decision. Nevertheless, a distinction must be maintained between purchase intention and purchase decision. Purchase intention do not necessarily lead to purchase decision. Firms need to keep in mind this aspect when designing packaging and contents. They can engage in substantive market testing before launching a new product to measure the impact of product attributes on consumers’ purchase behavior. SANTE ; ETHIQUE ; AGROALIMENTAIRE SECTEUR ; COMPORTEMENT DU CONSOMMATEURRésumé : The purpose of this research report is to assess the influence of growing health trends and consumer awareness of ethical stakes in their everyday lives on fast food chains in France. In fact, consumer values seem to play a major part in fast food chains’ brand images. Thus, fast food chains tend to try and rebrand themselves to put forward their engagement for sustainability and health through their marketing strategies. The empirical analysis is based on literature review of various research papers, but also newspapers articles and case studies, on the subject of food services strategies and consumer ethical values. We will also focus on the case of McDonald’s France and compare it to that of French “fast casual” chains, such as Cojean and Francesca. A total of six interviews were also carried out to investigate the attitude towards fast food brands in France. We urge the readers to take these rebrandings with a critical eye as they surge less from disinterested consumer care and more from a will to gain a competitive advantage and a good brand image in an increasingly saturated market.
