In France, the legislation about the nutritional label “gluten-free” (GF) is very strict. The term is covered by the European Union legislation under Regulation 828/2014. The law stipulates that only products containing a maximum of 20 parts per million (ppm) gluten content or less is authorized to be labelled as “gluten-free”. This applies to both packaged foods and foods served in restaurants. The AOECS (Association of European Coeliac Societies) – the European organization representing people who are affected by coeliac disease – developed a “gluten-free” standard that plays the role of a guideline for manufacturers and food safety auditing companies.
Patients suffering from coeliac disease must follow a gluten-free diet as a lifelong treatment. Others consume gluten-free labelled foods because they are sensitive to gluten at a lesser extent. But since a few years, the term “gluten-free” has become a synonymous of “healthy”. This worldwide food trend which leads people to purchase gluten-free labelled products is based on the perceived health benefits. Marketers rushed to satisfy the needs of this niche market by offering gluten-free processed foods that initially contain gluten. However, according to Kristin Kirkpatrick – Wellness Manager at the Cleveland Clinic Wellness Institute –, “people need to be aware that going gluten-free is not the golden ticket to healthy eating”. Indeed, the number of researches demonstrating that gluten-free labelled products do not bring any benefits to anyone that is not intolerant to gluten and can even be harmful for them is multiplying.
