This thesis aims to analyze and understand the different emerging food trends in France, and what are the challenges for companies, but also to show the influence of startups on these behavioral changes. This thesis will focus on the new consumption habits (bulk, local, organic, zero waste, etc.) that have emerged as a result of environmental awareness and have been taken over by numerous startups. Leaders in this movement, startups are leading the way and pushing large companies to follow the movement, which is not always easy. So the problematic of this thesis is about : How the rise of startups have shaken up the codes of the food industry and how are we going back to a more traditional way of consumption ? |
